For this question I had to go directly to Gary at Western Mountaineering. Here is his response:
"We put about an ounce of down into a standard bootie (size medium). The smalls get a little less, and size LG slightly more but on the whole each bootie gets about an ounce. The actual range is from ¾ of an ounce per bootie for an XS to 1.25 oz for an XL. Double these fill amounts to get the filling amount per pair. (i.e. one pair of medium booties has a total of 2 ounces, one ounce for the left bootie and another ounce for the right bootie)."
