The maximum load recommended for the Granite Gear Blaze AC 60 Ki is 35lb.
This backpack has no trouble accommodating a Backpackers Cache Bear Canister, one of the larger bear canisters available.

"To find your torso length, measure the distance between your seventh cervical vertebra and the shelf of your hipbones. Do this by standing up straight with your feet shoulder-width apart. Tilt your head forward and place your hands on your hips, thumbs to the back. With a flexible tape, have someone measure from the most prominent vertebra at the base of your neck to an imaginary line drawn between your thumbs. This will be your torso length."

With your specs, you could likely go with either size, so the right size for you will depend on how you like to wear your hipbelt. At your height, I would normally recommend a short torso length. However if you prefer to wear your hipbelt a bit lower, with the whole belt sitting below your iliac crest, than the regular may make more sense.
